In food products, acidulant play many function in food. In short notes, explain the function of acidulant in term of their function to control pH of food products?

Answer 1:
pH value for each food products are different in their value. For example in jam products, the suitable range of pH is around 2.9 - 3.4 to obtain desired gel setting. Besides that, acidulant also maintain pH of the carbonated beverages. Other than that, acidulant can acts as buffer. Buffer is needed to maintain the acidic fermentation in food products. When applying weak acid and salt, the pH maintain and will protect the colour and flavour to become drastically changes. The example of acidulant is citric acid.
